re: Detroit Style Pizza. I had been ordering Buholzer Brothers brick cheese online for something like $50 for 2pounds. Sort of insane to do but was enjoying the resulting pizza. I stopped in at Contadoro market in Livonia while I was there and brought it back to northern Virginia and got what I consider somewhat better brick cheese for so much less ($20 for 3 pounds). I have been dabbling with the crust. Dough is now 3/4 bread flour and 1/4 00 flour based on someone's rec. Seems to work. Sauce is generally whatever is at the store in a jar. Giant's organic brand works. My only stipulation is that it not be Papa John's levels of sweet. That stuff is gross. Pepperonis are mixed cooked on top of pie and a larger number cooked on the side and added later to avoid over greasing the pizza before serving. I have yet to do other toppings because I am working toward perfecting the one variant before i move on.
