Yes and I think that it was assumed that most of the racists lived in that section of the country, which is clearly not the case.

Right, virulent racism was everywhere, in every part of the country. We see evidence of that today in widespread support for racist political policies. The difference for people who lived in Jim Crow areas during the Jim Crow era was the awesome power of local governments and police that was used to humiliate and dehumanize the target of their hate down to the most minute levels.

Speaking of Borsch recipes, when my Ukrainian neighbors have cookouts it smells absolutely horrendous. It's one of the reasons prior to the Russian invasion that I avoided getting too close. I didn't want to get invited to their cookouts.
