smr-nj Posted July 15, 2023 Posted July 15, 2023 Tonight, I took advantage of some ripe tomatoes, EVOO, plenty of fresh basil, and garlic (& some red pepper flakes), and just boiled up some red lentil pasta. You don’t cook any of the other ingredients, just add it to the cooked/drained macaroni. I’d normally also add some freshly grated locatelli, but I wasn’t in a cheese mood. I love summer pastas. digitalpigsmuggler Posted July 18, 2023 Posted July 18, 2023 (edited) if you want a guacamole This one is good. 4 portions 1 bowl 7 pieces of avocado 1/2 Bushel of fresh cilantro 1 diced clove of fresh garlic 2 tablespoon of sour cream 2 Roman tomatoes 1/2 white onion 1/2 tablespoon salt & black pepper Juice of 1 lime 1.- Cut in half all the avocados, to remove middle piece, smash all avocados in one bowl, add the juice of the lime (this is to prevent the avocado oxidation) 2.- tomatoes and onioins are diced in small squares. 3.-cilantro: remove only 1 inch from the end of the stem. chop cilantro together with the stem ( the stem is very aromatic and gives flavor). 4.- incorporate all ingredients to the smashed avocado and mix. (Add salt and pepper as you prefer, add the sour cream for creamy texture). Highly recommend 1 to 2 Serrano peppers diced in small pieces to get a hot flavor 🔥 🔥. casimir Posted October 8, 2023 Posted October 8, 2023 1st chili of the season here. I go with the tried and true crock pot rather than fire pit. As much as I hate to admit summer is going away, the chili did hit the spot with the daytime temperatures settling into 50s for a stretch here. 1 Quote
